Sensational Summer Salads

Raspberry, Avocado & Mango Summer Salad

Serving size: 4 (2 cups each)

2 cups fresh raspberries
1/8 teaspoon freshly ground pepper
1/2 cup light raspberry vinaigrette (Recommended: Maple Grove Farms Fat Free Raspberry Vinaigrette)
8 cups fresh spinach (or mixed greens)
1 ripe mango, diced
1 medium ripe avocado, diced
1 cup red onion, thinly sliced
1/4 cup chopped walnuts

1. Combine spinach (or mixed greens), mango, raspberries, avocado and onion in a large bowl.
2. Pour the dressing on top and gently toss.
3. Divide the salad among 4 plates.
4. Top each with a sprinkle of nuts.
5. Garnish with pepper, if desired.
6. Enjoy!

White Bean & Arugula Salad
Serving Size: 4 (2 cups each)

2 cups white navy beans
2 Roma tomatoes, coarsely diced
8 cups prewashed baby arugula
1 cup red onion, finely chopped
1/4 cup extra virgin olive oil
3/8 cup apple cider vinegar

1. Combine beans, tomatoes, arugula, and onions in a large bowl.
2. Drizzle olive oil and apple cider vinegar on top and gently toss.
3. Refrigerate for 30 minutes for best and most refreshing results.
4. Divide the salad among 4 plates.
5. Enjoy!
